bizcocho de arándanos y moras silvestres

Ingredientes:


  • 200 g. de harina de todo uso
  • 200 g. de azúcar
  • 200 g. de nata para montar, con un mínimo de 35% de MG
  • 4 huevos M
  • 100 g. de aceite de girasol
  • 15g. de impulsor químico
  • una pizca de sal
  • arándanos secos, unos 100 g.
  • moras silvestres, o congeladas, otros 100 g. más o menos

Ingredientes para la glasa:


  • 50 g. de moras
  • 50 ml. de agua
  • azúcar glas, yo uso glacé seda de Azucarera, la que se necesite

Elaboración del bizcocho:


Batir los huevos hasta que blanqueen y doblen su volúmen con la pizca de sal y el azúcar. Añadir a chorro fino el aceite y seguir batiendo. Bajará un poco de volúmen según añadáis ingredientes pero no os preocupéis es normal. Añadir la nata a chorro fino, sin dejar de batir, mejor por el lateral del bol para intentar no perder mucho volúmen. Este proceso, como ya os he comentado en otras ocasiones se hace a mano, con varilla, o con cualquier varilla eléctrica que tengáis en casa.
Añadir la harina, junto con el impulsor, tamizándola con un colador fino, y mover con espátula de silicona o algo similar, con movimientos envolventes, justo hasta que todos los ingredientes estén perfectamente homogéneos. 
Ya os he explicado en alguna ocasión que este tipo de bizcocho pesado, es decir, que lleva grasa añadida, y además impulsor, no es necesario tener excesivo cuidado con el volúmen de los huevos, porque el impulsor químico, lo que normalmente se conoce como levadura química, es el que va a facilitar la subida de la masa, pero sí os recomiendo que hagáis un pequeño esfuerzo por conseguir una masa con volúmen porque realmente se nota la diferencia.
Precalentar el horno a 180ºC. y preparar el molde bien untado de aceite y harina, golpeando boca abajo con fuerza para eliminar el exceso. También podéis usar papel de horno. En esta ocasión lo he preparado en un molde rígido de plum-cake, pero ya sabéis sin agobios  cualquier molde es válido, teniendo en cuenta que los de silicona no tienen, a veces, la suficiente fuerza para resistir la subida del bizcocho y nos puede quedar algo más bajo o como más esparramado, pero independientemente de la forma final, está muy rico.


Volcamos el batido en el molde ya preparado y añadimos los arándanos y las moras por la superficie bien repartidas. Otra opción es mezclarlas con la masa, pero a veces caen demasiado al fondo y después no queda tan bonito. Yo lo hago de esta forma porque mientras se va calentando la masa en el horno, las propias frutas van cayendo hacia abajo y la subida de la masa hará que se tapen y se distribuyan. Tener en cuenta que esto es un batido de bizcocho no una masa, por ejemplo de bollería, que sí necesita que se amase un poco con los elementos que añadimos como frutos secos, ni siquiera es un plum-cake que aunque es tipo bizcocho es aún más pesado que éste y también necesitaría integrarlo antes de volcar en el molde. Pero probar vuestra propia opción, como siempre os digo.



Hornear en horno de 180ºC no menos de 45 minutos, comprobando en el centro con algo finito como una brocheta o un cuchillo pequeño y cuando salga limpio, lo tenéis.
Mientras con unas poquitas frutas que habremos guardado vamos a hacer un coulis sencillo, cociendolas en agua, solo en agua, justo la que necesitemos para cubrirlas y las dejaremos cocer unos minutos. Aplastamos las frutas para que suelten todo el sabor y el color que podamos y dejamos en fríen en el propio agua. Colar. En un bol ponemos el coulis que hemos conseguido, con 50 g. tendremos más que suficiente, y le vamos añadiendo azúcar glas hasta conseguir una glasa lo suficientemente densa como para cubrir el bizcocho.
Sacar el bizcocho del horno y dejar enfriar. Desmoldar y cubrir con la glasa. Decorar con unas moras.

I have already explained on occasion that this type of heavy cake, ie carrying added fat, plus driver, you do not need excessive care with the volume of eggs, because the driver chemical, which is commonly known as baking powder, is the one that will facilitate the rise of the mass, but I recommend you do a little effort to get a mass volume because I really noticed the difference.  Preheat oven to 180 ° C. and prepare well oiled and flour, beating down hard mouth to remove excess mold. You can also use baking paper. This time I have prepared in a rigid mold of plum-cake, but you know without strain any mold is valid, considering that silicone does not have, at times, hard enough to resist the rise of the cake and we can be somewhat lower or more esparramado, but regardless of the final form, is very rich. We pour the batter into the prepared pan and add the blueberries and blackberries by the well broken surface. Another option is to mix the dough, but sometimes too fall to the bottom and then is not so pretty. I do this because while warms the dough in the oven, the fruit itself are falling down and rising of the dough will get clogged and distributed. Note that this is a cake batter no mass, eg pastries, you do need to be loved around with the elements that add as nuts, not even a plum-cake that although it is kind cake is still heavier than this and would also need to integrate before dumping into the mold. But try your own choice, as I always say.
Bake in 180 oven least 45 minutes, checking in the center with something finite as a skewer or small knife and when comes out clean, you have it. While fruit with a few persons will have kept going to do a simple coulis, boiling water, just water, just that we need to cover them and let cook a few minutes. Fruits crushed to release the flavor and color we can and leave on fry in the water itself. Strain. In a bowl put the coulis we have achieved, with 50 g. have more than enough, and we are adding icing sugar until a glaze thick enough to cover the cake. Remove the cake from the oven and let cool. Unmold and cover with glaze. Garnish with a blackberry.

    1. si la glasa es tan fácil, como bonita y rica, ya lo he hecho antes, utilizar el zumo para las glasas, incluso algún licor, tengo por ahí cositas publicadas, pero éste es espectacular, gracias por venir, besitos
