mousse de turrón de jijona, del blando¡¡¡¡¡¡¡ (nougat mousse jijona)

Ingrendientes:


  • una tableta de turrón de Jijona
  • 2 huevos
  • 400 ml. de nata para montar, con un mínimo del 33% de MG (materia grasa)
  • 2 hojas de gelatina neutra


Elaboración:


  1. Trocear muy finamente 200 g. de turrón, las barras normalmente son de 250 g, pero he apartado un poco para la decoración. 
  2. En un cazo calentamos 200 ml. de nata, pero no hace falta que hierva, simplemente que coja temperatura. En un bol ponemos las hojas de gelatina a hidratar con agua fría, del grifo simplemente. En dos o tres minutos estarán muy blanditas y fuera del fuego se las incorporamos a la nata caliente, removiendo con espátula o cuchara para que se deshagan. Separar las yemas de las claras y añadir las yemas a la nata removiendo para que no se cuaje. Esta es una de las razones por las que no hace falta que coja mucha temperatura, A 80ºC., incluso algo menos, conseguiremos que el huevo, en este caso las yemas queden perfectamente hechas, no les hace falta hervir, ya que cuajarían.
  3. Incorporar el turrón y remover. Triturar la mezcla con cualquier aparato que tengáis que casa, y dejar en el frigorífico hasta que terminemos el resto de elaboraciones, que son rápidas y sencillas.
  4. Montar con una pizca de sal y una o dos gotitas de limón o vinagre de vino blanco las claras a punto de nieve muy duro.
  5. A parte montar la nata también muy durita. Para esto os recomiendo que la tengáis muy fría, montará antes y quedará muy firme.
  6. Sacar la mezcla de turrón del frigorífico y mezclar primero la nata montada, con espátula blanda y movimientos envolventes, dando vueltas al cuenco para que quede perfectamente homogénea, pero no le déis mucho trabajo para evitar que se baje. A continuación hacer lo mismo con las claras montadas, esta vez con algo más de cuidado porque son más delicadas. En cuanto esté bien mezclado, guardar en el frigorífico al menos cuatro horas.
  7. Para la presentación he rallado un poco de turrón y con un colador he espolvoreado cacao sin nada de azúcar.


Nota: el resultado es espectacular, suave y ligero, con un sabor a turrón intenso, pero no demasiado dulce al no añadirle nada de azúcar. Aunque por su puesto si sois muy golosos podéis añadirle un poco y yo creo que sería conveniente que fuera azúcar glass, o en todo caso azúcar blanquilla pero en la primera elaboración al calentar la nata para que se disuelva perfectamente.
Otra nota: no os dejéis engañar por la textura, es un postre perfecto por su sencillez y porque además se puede elaborar con una tableta de turrón que tengamos en casa de esas baratas que regalan en las cestas las empresas, o incluso que nos haya sobrado del año anterior, pero es muy calórico¡¡¡¡¡¡¡¡¡¡
