helado de caramelo salado con trocitos de chocolate (salted caramel ice cream with chocolate chips)

Ingredientes:

  • 150 ml. de leche
  • 150 ml de nata para montar, con un 30% de MG, y otros 300 ml. más
  • 4 yemas de huevo L
  • 200 g. de azúcar
  • 50 g. de mantequilla
  • una pizca de sal, yo utilicé maldon
  • y un chorrito de esencia de vainilla
  • chocolate en trocitos
  • una tableta de chocolate, con un mínimo del 53% de manteca de cacao

Elaboración:

  1. Primero haremos el caramelo. Ya os lo he explicado en otras recetas y sabéis que es muy sencillo, pero no está de más volverlo a decir. En una sartén con base antiadherente ponemos el azúcar a fuego bajo. Extenderla y olvidaros. No tengáis la tentación de remover, ni de subir la temperatura. Se irá tostando desde los extremos hacia el interior, y una vez tenga un precioso color caramelo, no muy oscuro, caramelo rubio se llama en términos reposteros, lo quitamos del fuego y con el mango de la sartén lo movemos para que coja la misma temperatura por todos lados. Reservar.
  2. Mientras habremos calentado, pero sin dejar que hierva, los 300 ml. de nata, con la leche y la esencia de vainilla para que infusione y adquiera el sabor. Reservar.
  3. Batir ligerísimamente las yemas, únicamente necesitamos que se rompan y se unan, acordaros que no queremos para estas elaboraciones que se blanqueen, por eso no las batimos para que no pierdan color.
  4. Cuando el caramelo haya perdido algo de calor le añadimos la mantequilla en trocitos y la sal, removemos bien para que se disuelva. Le añadimos las yemas sin dejar de remover con intensidad para que no se cuajen. Volvemos a poner al fuego, bajito, y sin dejar de mover le añadimos la infusión de leche, nata y esencia de vainilla. No debemos dejar que hierva porque se cortaría, hay que remover, yo lo hago con espátula de silicona, para que no se pegue. Continuar hasta que coja una consistencia de natillas espesitas.
  5. Verter sobre un molde, mejor metálico porque reparte muy bien el frío, y meter a congelar. Dejar que coja frío y endurezca al menos un par de horas. Sacar y batir con las varillas. Repetir el proceso, acortando los tiempos porque cada vez estará más frío, al menos tres o cuatro veces más. La primera vez que lo saquéis para batir será el momento ideal para añadirle los trocitos de chocolate. 
  6. El helado necesita de un período de maduración, para que asiente, para que los sabores, la textura y el aspecto, es decir, sus características organolépticas sean las mejores. Os recomiendo al menos 48 horas en el congelador.

  1. Atemperar una tableta de chocolate, hacer unas galletas sobre papel vegetal, y cuando hayan endurecido, si hace mucho calor las podéis meter un ratito en el frigorífico, rellenar con el helado. 


Nota: Este helado es distinto, pero no es salado, la sal lo que hace es intensificar el sabor del caramelo, queda supercremoso, incluso cuesta que congele del todo, pero os aseguro que es adictivo, riquísimo. Podéis hacerlo sin los trocitos de chocolate y es igualmente delicioso.
Otra nota: En algunas recetas que he visto por la red lo hacen con mantequilla salada, no lo he hecho nunca así pero quiero probarlo, ya os contaré.
Y otra más: Como véis en las fotos queda muy cremoso, asi que he pensado volver a hacer la receta, pero quitando la leche, es decir, haré la base de crema inglesa pero sólo con nata, creo que de esta forma conseguiré más cuerpo.

Beat the yolks very slightly, only need to break and join, Acordaros do not want to whiten these elaborations, why not beat to not lose color. When the candy we have lost some heat we add the diced butter and salt, stir well to dissolve. We add the yolks, stirring with intensity so they do not curdle. We return to the heat, short, and while moving we add the infused milk, cream and vanilla essence. We must not boil because it cut, you have to remove, I do it with silicone spatula to prevent sticking. Continue until you take espesitas custard consistency. Pour into a mold, because better metal distributes the cold very well, and put a freeze. Let cool and harden take at least a couple of hours. Remove and beat with rods. Repeat the process, shortening the time because every time will be cooler, at least three or four times. The first time you bring forth to beat will be the ideal to add chocolate chips now. The ice cream needs a ripening period to settle, so that the flavors and texture, and appearance, that is, its organoleptic characteristics are the best. I recommend at least 48 hours in the freezer.

Tempering chocolate tablet, make some cookies on baking paper, and when they have hardened, if it is hot put the can in the fridge for a while, fill with ice cream.
Note: This ice cream is different, but not salty, the salt does is intensify the taste of candy, supercremoso is even difficult to freeze completely, but I assure you it is addictive, scrumptious. Can you do without the chocolate chips and is equally delicious.
Another note: In some recipes I've seen on the net do it with salted butter, I've never done it but I want to try it, I will tell you.
