helado de frutos del bosque con sabayón de cava (frozen berries with cava sabayon)

Ingredientes para el helado de frutos del bosque (para cuatro personas aprox.)



Ingredientes del sabayón de cava:


  • 2 huevos medianos
  • 150 ml. de cava, mejor brut nature
  • media vaina de vainilla
  • 50-100 g. de azúcar

Elaboración del helado de frutos del bosque:


  1. Es un helado rápido y muy sencillo de hacer. Ya sabéis que el helado base se hace con crema inglesa, pero ésta es una forma expres de tener un delicioso helado prácticamente en un par de horas, sin mucha elaboración.
  2. Trituramos las frutas congeladas. Yo acabo de estrenar un procesador y en un par de minutos estaban perfectamente trituradas, como una papilla, pero dedicarle el tiempo necesario con la herramienta que tengáis en casa. Si no queréis que tenga restos de semillas podéis colarlo, pero realmente no es necesario. 
  3. Añadir los dos tipos de azúcar y la nata y seguir triturando hasta conseguir una masa fina y homogénea.
  4. Ya tenemos la base del helado, a partir de aquí podemos hacerlo de dos formas. Una con la heladora, que ya sabéis que yo no tengo, durante el tiempo necesario. O lo metemos en el congelador hasta que empiece a congelarse por los bordes, alrededor de una hora. Sacamos varillamos bien para romper los cristales de hielo que hayan podido formarse. Repetir la operación al menos dos veces más. 
  5. Queda muy duro por lo que os recomiendo que lo saquéis del congelador un ratito antes de servir.

Elaboración del sabayón de cava:


  1. Para esta elaboración debemos preparar con antelación algunos elementos. 
  2. Ponemos a hervir un cacito con agua con un tamaño suficientemente amplio para poder encajar un bol que colocaremos sin que toque el agua. En el bol vamos a montar las yemas de huevo con el azúcar, al baño maría, previamente separadas las claras que montaremos firmemente con una pizca de sal y reservaremos en frío.
  3. Las yemas si alcanzan una temperatura superior a a 60ºC. se cuajarán, por lo que debemos ir jugando con el calor del agua. Es decir, las pondremos encima o las quitaremos del calor cuando sea necesario. Debemos conseguir que doblen su volúmen y que blanqueen totalmente, con una textura firme. Lo conseguiremos con el calor y con un movimiento enérgico de las varillas. Si no controláis mucho podéis usar un termómetro. Pero simplemente hay que tener cuidado y cuando notéis que empieza a calentarse retirarlo del calor del agua y seguir montando en la encimera. No os llevará más de diez minutos si lo hacéis con intensidad.
  4. Cuando estén muy montadas añadir el resto de los ingredientes, la vaina abierta a la mitad y quitadas las simientes, pero incorporarla también porque da mucho sabor. Seguir montando. Dejar atemperar y sacar las claras del frío, o montarlas en este momento, que también es una buena opción.
  5. Para mezclar estos ingredientes siempre habremos de añadir lo más caliente a lo frío, poco a poco y sin batir, mezclando suavemente de abajo hacia arriba durante el tiempo justo para que se incorpore todo bien, pero sin darle mucho trabajo porque se podría bajar todo. 
  6. El único inconveneniente que tiene el sabayón es que hay que hacerlo en el momento porque se baja rápidamente.
  7. En cuanto a la cantidad de azúcar, yo lo he hecho con 50 g. porque quería que fuera un postre no muy dulce, que mantuviera la acidez propia del cava, que por otro lado me encanta, pero admite más y también queda delicioso. 
  8. Y también deciros que no es apropiado para personas que no consuman alcohol o niños poque como no llevamos la mezcla hasta la ebullición no se evaporan los alcoholes.

Montaje del postre:


  1. Colocar unas cucharadas del sabayón en un plato hondo o copa. Poner encima una bola generosa de helado y adornar con unas frutas, que previamente habremos dejado descongelando. Tenía hecho un coulís de frutos del bosque y se lo he añadido para darle otra textura, pero no es necesario. También podéis espolvorear azúcar glass y poner unas hojitas de hierbabuena.
  2. Yo lo he servido algo templado, como resulta inmediatamente después de terminada la elaboración, pero si lo queréis frío, preparar otro recipiente con mucho hielo y colocarlo encima para que baje la temperatura rápidamente, ya que como os he dicho si lo dejáis reposar se bajará y cambia totalmente la textura, aunque por supuesto se puede tomar de igual forma.


Nota: la salsa sabayón es una receta italiana muy antigua que se elaboraba con huevos crudos, pero que ha ido variando y ahora se realiza al baño maría. También hay recetas que le incorporan nata montada, pero creo que es mucho más ligera con las claras. Es deliciosa y delicada y también se puede realizar para recetas saladas cambiando un poco los ingredientes y la elaboración.
